Brassicas
Cabbage originates from the temperate coastal regions of Europe, where early forms emerged from wild brassicas and were already cultivated in antiquity. Over long periods, numerous distinct types developed, each shaped differently across regions. The great diversity ranges from head, leaf and flowering cabbages to curly, smooth or strongly ribbed forms, including colour variations from yellow and light green to dark green and violet.
In subtropical climates, many cabbage types thrive particularly well during the milder seasons, as they benefit from stable and balanced conditions. For warmer regions, there are also varieties that tolerate higher temperatures and reliably maintain their leaf or head structure. In temperate climates, almost all of our traditional and historically preserved open‑pollinated variants perform consistently, as they grow reliably under cooler conditions. Cabbage shows a wide ecological range and finds suitable conditions across very different climate zones.
